How risky is upgrading to forge pistons, rods and resetting the bearings?

What are the chances of bending/ warping the crank/ block?

That is an extremely broad and general question!
Firstly what engine do you have would be a good start...
What aspiration? NA or boosted?
What compression ratio? How much boost if (if applicable)
What power figures are you chasing?

^^^^ the above was referring to the forge piston/rods. If 250whp... You are no where within the range to bend the crank or block.

As for Driveline.... Your diff is the weakest point... Upgrade to an LSD.
Should even be able to get away with stock shaft.

Otherwise there are workshops that can custom make/strengthen your stock shafts.
Otherwise there Should be off the shelf options available if you look around
