Picked up about 2 metres of 6mm foam sheet. This goes between the headlining material and the sunroof flame/motor etc, so there's no sharp corners showing through the headlining and insulated the noise a bit too.
And some 3M super 74 spray adhesive - to attach the new headlining in place. Just need some time now! Not going to happen this weekend either...bah.
